This is how the cookbook (Magic Foods RD) version looks.
The Recipe and how mine look:
2 Medium Sweet Potatoes Peeled
I left mine unpeeled for extra fiber and ended up only using half - the other half I saved for later.
2 teaspoons olive oil
1/2 teaspoon paprika
1/4 teaspoon salt or to taste
1/8 teaspoon freshly ground pepper
I added smaller amounts because I was using less potato.
Preheat Oven: 450 Degrees
Cut Sweet Potato into 1/2 inch wide wedges and toss in seasonings.
Place on sheet.
Bake turing several times until golden brown and tender, 25 to 30 minutes.
One serving is 1 cup.
This is what I had for that meal:
"Fries"
Salad with lots of veggies, some feta cheese, light vinagarette and a few croutons.
Veggie Morning Sausage
They were so Delicious! 30 minutes was a little too long and I ended up taking mine out early and they were still very crispy. A blood sugar and weightloss friendly meal.
